SABROSITO Serves Up “Cuisine of the Americas†for LCBO Latin Festival
TORONTO — SABROSITO* Private Chef Caterer will launch the first in a series of three Latino cooking classes for the LCBO’s Latin Festival at the Bayview store.
SABROSITO Chef-Owner Carlos Fuenmayor will demonstrate a four-course meal each Saturday — July 7, 14 and 21, 11 a.m. to 1 p.m. – featuring dishes from Colombia, Cuba, Ecuador, Mexico, Nicaragua, Panama, Peru, Puerto Rico and Venezuela.
“These countries represent what I like to call, ‘La Cosina de las Americas,’ meaning ‘Cuisine of the Americas,’ referring to Mexico, Central America and South America,†says Fuenmayor, a Cordon Bleu chef and native of Venezuela.
“I love this term,†Fuenmayor added, “because it shows the culture’s great expanse. What I also love about this cuisine is how it cooks up influences from ancient, indigenous, European, African and Caribbean cultures.â€
After 14 years as a fine-dining restaurant chef, Fuenmayor went out on his own last year to specialize in small in-home parties, often featuring Latino accents. Among his early contracts was a Toronto party for Governor General Michäelle Jean.
The latest trend in his business, according to Fuenmayor, is in-home cooking demonstrations as a new way to entertain. “People have a tremendous curiosity about cooking,†he says, “and it’s so much fun for me to turn a demonstration into entertainment, literally, and then to serve it as a great meal.â€
Fuenmayor does cooking demonstrations for the LCBO throughout the year. He has also gives classes at Great Cooks and will be doing a class for Dish on July 17.
“My dream is to open a cooking studio that I’d call “Cocina de las Americas,†says Fuenmayor, “where I can share my passion for this cuisine and celebrate Latin culture.â€
Sabrosito is Spanish for “Mmmmm. Wow. That’s good!â€
